Simple wood pigeon recipe

Wood pigeons can be common but quite difficult to catch. However, if you do get one they are very tasty and very quick to prepare.

If the bird is still warm, don’t bother gutting or plucking, just use a knife to remove the skin around the breast area. Slice down one side of the breast bone, right down to the ribs, then turn the knife out to the wing to cut the breast fillet off. Repeat for the other side.

Rinse any feathers or dirt and pat dry. Rub salt and pepper into the meat.

Heat a heavy frying pan and melt some butter. Place the breasts in and cook for a few minutes on each side or until done to your liking. Place on a warm plate to rest for five minutes.

Serve as is, or dollop a small amount of port preserve on top. Delicious.
