Grayling

Grayling is a beautiful fish that lives in many British rivers. It tends to shoal so when you can one, you often catch another shortly after. It also has a very delicate flavour and I am told is classed as a delicacy in other parts of the world. As it has a different season to trout, it can be a tasty alternative local food.

Here is a recipe for a Grayling riverside feast.

Greyling and Bacon

  • 2 gutted greyling
  • Flour
  • Salt and pepper
  • 75g butter
  • 50g streaky bacon cut into slivers
  • Handful of sorrel

Melt the butter in a frying pan over an open fire. Mix a handful of flour with a good dash of salt and pepper and rub on the greyling. Place the fish in the frying pan and cook until browned on both sides. Serve onto a plate and cover to keep warm.

Brown the bacon in the butter then when nearly done add the sorrel to quickly blanche. Pour the whole lot over the fish and tuck in.
